Perfectly Fluffy Pancakes:

There’s something undeniably magical about a stack of warm, golden pancakes on a lazy morning. Or by my daughters rules; any morning that ends in “y.”

Whether it’s a slow Sunday breakfast or a Tuesday morning when everyone is suddenly very invested in what’s for breakfast, pancakes have a way of making everything feel a little more special.

And let’s be honest: there’s something deeply satisfying about putting a giant stack of fluffy pancakes on the table and watching everyone’s eyes light up. Bonus points if there’s enough syrup involved to require a napkin….or sometimes a whole bath.

The good news? You don’t need a fancy mix, complicated ingredients, or secret pancake-making credentials. Just a handful of pantry staples, a few simple tricks, and the willingness to flip a few pancakes that may or may not come out perfectly round. (The first one is just practice anyway. That’s my story, and I’m sticking to it.)

This recipe will walk you through everything you need to make light, airy pancakes with perfectly crisp edges and cloud-soft centers.

What You’ll Need

This recipe makes about 8–10 medium pancakes, perfect for 2–3 servings. Here’s your shopping list:

Dry Ingredients

  • 2 cups all-purpose flour

  • 2 tablespoons light brown sugar

  • 1 tablespoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon fine salt

Wet Ingredients

  • 1 cup buttermilk (or 1 cup whole milk + 1 tablespoon white vinegar, left to sit for 5 minutes)

  • 2 large egg

  • 4 tablespoons unsalted butter, melted and slightly cooled

  • 1 teaspoon pure vanilla extract

  • Bonus: if you are into sourdough you can add about a 1/2 cup of discard to it completely optional but adds depth to the flavor

For Cooking

  • 1–2 tablespoons unsalted butter or neutral oil (for greasing the pan)

Step-by-Step Instructions

  1. Mix the dry ingredients. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Create a small well in the center and set aside.

  2. Combine the wet ingredients. In a separate bowl or large measuring cup, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

  3. Bring it all together. Pour the wet ingredients into the well of the dry ingredients. Gently fold everything together with a spatula or wooden spoon — stop as soon as the dry streaks disappear. The batter will look lumpy, and that’s perfectly fine! Over-mixing is the enemy of fluffy pancakes.

  4. Rest the batter. Let the batter sit undisturbed for at least 5 minutes. This allows the leavening agents to activate and gives you extra lift.

  5. Preheat your pan. Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter and let it melt, swirling to coat the surface evenly. The pan is ready when a drop of water flicked onto the surface sizzles and evaporates immediately.

  6. Cook the pancakes. Pour about ¼ cup of batter per pancake onto the skillet. Cook until bubbles form across the surface and the edges look set — about 2 to 3 minutes. Flip gently and cook for another 1 to 2 minutes until golden brown on the second side.

  7. Keep them warm. Transfer cooked pancakes to a baking sheet in a 200°F (93°C) oven while you finish cooking the rest of the batch.

Tips for Light & Fluffy Pancakes

A few small habits make a big difference when it comes to pancake perfection:

  • Don’t over-mix. Lumpy batter is your best friend here. Over-stirring develops gluten, which leads to dense, rubbery pancakes.

  • Use buttermilk. The acidity reacts with the baking soda to create extra bubbles, giving your pancakes a beautiful rise and a slight tang.

  • Let the batter rest. Even 5 minutes of rest time makes the batter puffier and more tender.

  • Watch your heat. Medium heat is the sweet spot. Too hot and the outside burns before the inside cooks; too low and they’ll turn out pale and flat.

  • Flip only once. Resist the urge to press down on the pancake after flipping. Let them puff up on their own!

  • Room temperature ingredients. Cold eggs and milk can cause the melted butter to solidify, leading to uneven mixing. Let your wet ingredients come to room temp before starting.
